This recipe can be used as a pie crust for a savory pie application or as a baked empanada dough recipe. Make sure to purchase an all-vegetable shortening that is non-hydrogenated. They are typically made with mechanically pressed palm oil.
- 1 cup all-purpose 100% whole wheat flour
- 1 cup 100% whole wheat pastry flour
- 1 teaspoon fine sea salt
- 1/3 cup all vegetable shortening
Pulse together dry ingredients in food processor until thoroughly combined. Add in shortening and pulse until corn meal like texture is formed. Add enough cold water (about 1/2 cup) to form a dough that just leaves the sides of the mixer bowl. Dump onto plastic wrap, shape into disks, and refrigerate for at least half hour or until ready to use!
