This recipe replaces the traditionally used white refined sugar with agave nectar-a delicious and whole-foods way to incorporate more peanuts into one’s diet.  The texture is pleasantly chewy and the recipe so simple!

  • 1.5 cups peanuts, unsalted and unroasted
  • ½ cup light agave nectar

  1. Combine agave and half cup water in a small pot.  Turn heat to medium low and take off heat when candy thermometer registers 300 degrees Fahrenheit.  Stir in peanuts.
  2. Dump mixture onto parchment paper, silicone baking mat, or any lightly greased surface and let cool until taffy sets completely.  Break into smaller pieces and enjoy!
