Peanut Taffy

This recipe replaces the traditionally used white refined sugar with agave nectar-a delicious and whole-foods way to incorporate more peanuts into one’s diet. The texture is pleasantly chewy and the recipe so simple!
Ingredients:
- 1.5 cups peanuts, unsalted and unroasted
- ½ cup light agave nectar
Directions:
- Combine agave and half cup water in a small pot. Turn heat to medium low and take off heat when candy thermometer registers 300 degrees Fahrenheit. Stir in peanuts.
- Dump mixture onto parchment paper, silicone baking mat, or any lightly greased surface and let cool until taffy sets completely. Break into smaller pieces and enjoy!
